When the waiter brings the wine to the table
Do not sniff the cork
It should be moist when you touch it. That means the restaurant is properly storing the wine bottle on it’s side.
Before taking your first sip
swirl the wine in the glass and sniff. You should smell for flaws.If you smell any hint of mold, send the bottle back.
As you sip the wine
Bring air into your mouth to release all of the flavors.

Fish – White Wine
Red Meat – Red Wine
Chicken – Both pair well
